Lemon Fluff Icing

1 cold egg white
1 cup granulated sugar
1/4 teaspoon lemon extract
1/2 cup boiling water
1/4 teaspoon cream of tartar
2 to 3 drops yellow food coloring
In bowl combine all ingredients. Whip on high speed for 10 to 15 minutes. Frost cooled cake.
