Lucky Irish Oatmeal Cake

St. Patty’s Day recipe for everyday of the week.

Base

Ingredients

  • ½ cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup oatmeal..1 ¼ cup boiling water-let stand
  • 2 eggs
  • 1 ½ cups flour
  • 1 Tsp Baking Soda
  • 1 Tsp Cinnamon
  • 1 Tsp Vanilla
  • ½ Tsp Nutmeg
  • ½ Tsp Salt

Preparation

  1. Cream sugar and butter; add eggs and vanilla and beat until smooth
  2. Add dry ingredients and mix until fully incorporated
  3. Add oatmeal
  4. Bake at 350 Degrees for 40 minutes in a 9x 13 pan. Greased
  5. Put to the side.

Prepare the topping to be added to the cake for broiling.

Topping

Ingredients

  • 3 Tbsp butter
  • ¾ cup brown sugar
  • 4 Tbsp heavy cream
  • 1 cup chopped pecans
  • 1 cup coconut
  • 1 tsp vanilla

Preparation

 

  1. Bring butter and sugar to a boil in a pan. Add nuts, coconut, and vanilla.
  2. Spread evenly over the top of the cake.
  3. Put cake under the broiler for 1 minute. Watch carefully.
