Old Fashioned Fruit Cake

Love pineapple, this is a wonderful substitute for the traditional fruit cake.

Ingredients

  • 3 cups flour
  • 1 Tablespoon baking powder
  • 1 Teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 4 large egg
  • 2 cups sugar
  • 1 15 oz can crushed pineapple
  • 1 cup coconut flakes

Method

Sift together flour, baking powder, baking soda, and salt. Beat together butter, eggs, and sugar until smooth. Gradually add dry ingredients to butter mixture until well incorporated, fold in pineapple, and juice from pineapple. Pour into a greased 9 by 13 inch baking pan, and bake at 350 degrees for 35 minutes or until golden brown. Ice cooled cake with cream cheese icing and sprinkle with flaked coconut. Recipe for icing below.

Cream Cheese Icing

  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 tsp. vanilla
  • 1 lb. pkg. powered sugar

Whip cream cheese, butter, and vanilla in medium bowl. Gradually add powered sugar, blend until smooth.
