Orange Walnut Cake
This Orange Walnut Cake goes together quickly. Perfect for afternoon tea!
Note: Orange Walnut Cake can be made with lemon instead of orange.
Ingredients
- 1 c golden raisins/sultanas, plumped and drained
- 1 large orange, washed
- 1/3 c walnuts
- 1 c AP/plain flour
- 1 c granulated sugar
- 1 tsp baking soda
- 1 tsp salt
- 1/2 c butter, softened, plus extra for the pan
- 1 c whole milk
- 2 large eggs
Topping
- 1/3 c reserved orange juice
- 1/3 c sugar plus 1 tsp ground cinnamon
- 1/4 c chopped walnuts
Method
- Preheat the oven to 350 F
- Mix the flour, sugar, baking soda and salt in a large bowl. Grate the rind off the orange, leaving behind the white pith. Squeeze the juice from the orange, strain and set aside. Place the orange pulp, grated rind, raisins/sultanas and walnuts in a food processor and chop them coarsely together.
- Add the butter and 3/4 cup of milk to the dry ingredients. Mix at low speed for two minutes. Beat in the eggs and the remaining milk. Stir in the fruit and nut mixture.
- Butter and flour the bottom of a 9 x 9 inch baking pan. Pour in the batter. Bake for 40–50 minutes. The cake is done when a toothpick inserted into the centre comes out clean. Let the cake sit for a few minutes. While it is still warm, spoon the orange juice over the cake and sprinkle with the walnut/cinnamon sugar topping. Let the cake cool completely before serving.
