Orange Walnut Cake

This Orange Walnut Cake goes together quickly. Perfect for afternoon tea!

Note: Orange Walnut Cake can be made with lemon instead of orange.

Ingredients

  • 1 c golden raisins/sultanas, plumped and drained
  • 1 large orange, washed
  • 1/3 c walnuts
  • 1 c AP/plain flour
  • 1 c granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 c butter, softened, plus extra for the pan
  • 1 c whole milk
  • 2 large eggs

Topping

  • 1/3 c reserved orange juice
  • 1/3 c sugar plus 1 tsp ground cinnamon
  • 1/4 c chopped walnuts

Method

  1. Preheat the oven to 350 F
  2. Mix the flour, sugar, baking soda and salt in a large bowl. Grate the rind off the orange, leaving behind the white pith. Squeeze the  juice from the orange, strain and set aside. Place the orange pulp, grated rind, raisins/sultanas and walnuts in a food processor and chop them coarsely together.
  3. Add the butter and 3/4 cup of milk to the dry ingredients. Mix at low speed for two minutes. Beat in the eggs and the remaining milk. Stir in the fruit and nut mixture.
  4. Butter and flour the bottom of a 9 x 9 inch baking pan. Pour in the batter. Bake for 40–50 minutes. The cake is done when a toothpick inserted into the centre comes out clean. Let the cake sit for a few minutes. While it is still warm, spoon the orange juice over the cake and sprinkle with the walnut/cinnamon sugar  topping. Let the cake cool completely before serving.
