Oven Baked Chicken Quarters

Chicken quarters are one of the cheapest meats that you can buy. Here is one of my favorite ways of cooking them for my family. So simple and easy, and a great hit at dinner time.

To begin, you will need:

  • Chicken quarters, 1 for each person eating
  • Garlic powder
  • Parsley (fresh or dried)
  • Seasoning salt
  • Olive oil (or whatever oil you have on hand)
  • Black pepper

To start off, make sure your chicken quarters are defrosted. Rinse your chicken quarters under the tap, and dry with paper towel.

*Drying is important as it helps the oils stick to the meat. Oil on the meat is going to make the skin nice and crispy.

Preheat your oven to 350 degrees. Place your chicken quarters in an oven safe dish, evenly spaced without overlapping. I like to use tinfoil on my dishes before placing the chicken. It makes clean up easier. Just dispose of the tin foil after cooking.

Using paper towel, “brush” on the olive oil. Do not use too much, just dab it with the paper towel with oil on it.

It’s time to season the chicken. I never use measurements for this. Just remember not to overdo it. The mix of garlic powder, parsley, seasoning salt, and black pepper make a great combination for this type of meat. I sprinkle each seasoning separately.

Once you are finished with seasoning, place the chicken in the oven. At this temperature it takes between 45Min’s-120 Min’s depending on your oven, and the size of the quarters. To be safe, I would leave it in for at least 1 hour. Check often after 45 Min’s.

Remove from the oven, and let the chicken stand for 10 minutes. This allows the chicken to finish cooking inside.

    Sounds delicious, though as someone who likes food spicy I’d probably add a few other spices too.
