Pineapple Upside-Down Cake Recipe

A recipe for pineapple upside-down cake.

Ingredients

  • 1 cup of butter
  • 1/3 cup brown sugar
  • 5 pineapple slices (reserve the juice)
  • 5 maraschino cherries
  • 1 ¼ cup flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1/3 cup shortening
  • 1 egg
  • ½ cup liquid (reserved pineapple juice and milk)
  • 1 teaspoon vanilla

Method

Preparing the brown sugar glaze:

  1. In a round 8-inch dish place butter. Microwave on high power for 30 seconds to 1 minute to melt.
  2. Sprinkle brown sugar over melted butter.
  3. Drain pineapple on paper towels and arrange in dish over butter/brown sugar mixture.
  4. Place a cherry in the center of each slice.

Preparing the cake batter:

  1. In a medium bowl place flour, sugar, baking powder, salt, shortening, egg, liquid, and vanilla.
  2. Beat for 3 minutes on lowest mixer speed, scrapping bowl constantly for the first 30 seconds.
  3. Carefully spread batter over fruit-sugar mixture in dish.
  4. Microwave on high for 9 to 11 minutes.
  5. Invert cake onto plate. Let dish stand over cake for a few minutes.
