Pound Cake Recipes
Recipes that dress up plain old pound cake are delightful in appearance and taste.
Peaches and Pound Cake (Easy!)
1 prepared pound cake, sliced
2 cups fresh or canned sliced peaches
1/4 cup granulated sugar
1 teaspoon lemon juice
1 cup heavy cream, whipped or Cool Whip
1/2 teaspoon ground cinnamon
1/2 cup firmly packed brown sugar
Preheat oven to broil. Place pound cake slices on individual ovenproof serving dishes or in a glass baking dish. Top with peaches; sprinkle with cinnamon and brown sugar. Broil 1 to 2 minutes or until golden brown. Add vanilla ice cream or whipped cream on top, if desired. Broil 1 to 2 minutes or until golden brown.
Nut Cream Cheese Pound Cake ( A bit of work, but well worth it!)
1 1/2 cups walnuts or pecans
2 tablespoons butter
2 tablespoons sugar
1 cup butter, softened
6 ounces cream cheese, softened
1 teaspoon lemon rind, grated
1 1/2 cups sugar
4 large eggs
2 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon salt
Preheat oven to 300 degrees. Chop 1/2 cup of the nuts fine for the pan and chop the remainder medium fine for the batter. Butter 2 quart fluted tube pan heavily with 2 tablespoons butter. Sprinkle pan with1/3 cup chopped nuts; sprinkle 2 tablespoons sugar over nuts. In a large mixing bowl, cream butter with cream cheese and lemon rind. Gradually beat in sugar. Beat in eggs one at a time. Resift flour flour with baking powder and salt. Blend flour mixture into creamed mixture. Stir in remaining medium fine chopped nuts. Pour into pan. Bake 1 hour and 20 minutes to 1 hour and 30 minutes or until cake tester comes out clean. Cool in pan, on wire rack, for 10 minutes. Turn out onto wire rack and cool completely. Serves 12 to 15.
