Prune and Fig Cake: It Will Keep You Going
A tasty way of eating high fiber.
Ingredients
- 150g Whole wheat flour
- ½ Teaspoon Bicarb of Soda
- 1 Teaspoon mixed spice
- 125g Dried figs
- 125g Prunes (pitted and chopped)
- 150ml Apple juice (100% juice)
- 120ml Natural Yogurt
- 120ml Corn oil
- 2 Eggs (beaten)
Method
- Into a saucepan put, figs, apple juice and prunes, cover the pan and gently simmer for 10 minutes.
- Remove from heat and leave to cool.
- Once cool add the rest of the ingredients and stir thoroughly, pour into a lined, greased 20cm cake tin, make sure it is a deep one.
- Bake in a moderate oven 180c, gas 4 for 50 minutes, check it is firm and cooked, remove from oven and leave in tin for 2/3 minutes, then place onto a cooling rack.
- You can also add chopped walnuts (25g) on top of the mixture before cooking for added flavor and texture.
NB: Because this cake is very high in fibre it is not wise to consume large portions or to give it to children under 3 years

Prunes and figs! Yes that will keep you going. I will try this but I need to leave out the prunes. Thanks for the wonderful recipe.
