Tasty Victoria Sponge
Recipe for a tasty victoria sponge cake,a great tea time treat..
You will need;-
200 grams sifted flour
200 grams butter(softened)
200 grams caster sugar
4 eggs (beaten)
1 tablespoon vanilla essence
For the filling
3 tab pale and fluffylespoons jam
1.5 tablespoons icing ugar
2×20 cms round baking tins,greased and floured
Method
Pre-heat oven to 200 degrees/gas mark 6
Using a whisk,Cream the butter,vanilla essence and sugar until pale and fluffy
Add the beaten egg a little bit at a time
*If the mix starts to curdle,try adding 1-2 tablespoons of flour.*
Fold in the flour using a metal spoon.mix flour in well
Divide the mixture between the two cake tins,bake for 25 minutes or until the cakes spring back when touched.
Remove carefully from cake tins
Once the cakes have cooled down,spread one cake with the jam ,sandwich both the cakes together and dust the top of the sponge with the icing sugar.
