The Easy Banana Cake

Ideal for using up bananas that you’ve kept for a bit too long.

I was taught this recipe by a Trinidadian lady. I never got to ask her if it was an authentic Trini recipe but I suppose it could be, after all Central America does export more bananas than any one else.
 
The beauty of this recipe is that you can use up all of those bananas that are past their best. You know, when there is more black than yellow on the skins!

Ingredients

  • 4oz butter or margarine
  • 6oz soft brown sugar (Demerara)
  • 8oz self raising flour
  • 2 eggs, beaten
  • 2 large or 3 medium very ripe bananas
  • 1 tsp mixed spice
  • 2 tsp vanilla essence
  • 2 oz chopped walnuts or sultanas

Method

Pre-heat the oven to 180°C (350°F or gas mark 4)

Grease and flour a 2lb loaf tin.

Mash the bananas with a fork.

Chop up the walnuts reasonably finely. In case of a nut allergy sultanas can be used as an alternative.

Cream the butter and sugar together and mix in the eggs.

Stir in the bananas and chopped walnuts or sultanas and mix thoroughly.

Fold in the flour.

Put the mixture into the loaf tin and bake for 40 minutes then lower the temperature to 150°C (350°F or gas mark 2) and cook for a further 30 minutes.

Test with a skewer. If it comes out clean the cake is cooked, if it comes out with cake mixture sticking to it put back in the oven for another 10 minutes or until cooked.

Note: Depending on the accuracy of your temperature regulator or the fact that you may be using a fan assisted oven, you may not need all of the final 30 minute stage so keep an eye on it from here on in!

    I’ve tried various recipes for banana cake in the past and they ‘ve always been very ’solid’ or pretty tasteless so I’m definitely going to give yours a whirl George!

    We love banana cake and always have one on the go. Try soaking the dried fruit in cold tea before you add and adding some golden syrup – not a calorie in sight!
