Ugly Duckling Cake
My mother’s world famous ugly duckling cake that I had the privilege of enjoying as a kid, and now as an adult.
She use to make it for me all the time while I was growing up as a youngster.The name might be weird but the taste is impeccable.
Preparation Time: 1 Hour
Ingredients
- 1 package of yellow cake mix
- 1 package of vanilla pudding mix (4 serving size)
- 1 cup of freshly squeezed lemons
- 1 large can of fruit cocktail in heavy syrup
- 1 ½ cup of flaked coconut flakes
- 4 eggland farm fresh eggs
- ¼ cup of pure vegetable oil
- ½ cup of of chopped walnuts or pecans
- ½ cup of pure brown sugar
- These are the ingredients you will need to make the glazed topping.
- ½ cup of unsalted butter or margarine
- 1 cup of coconut flakes
- ¾ cup of sugar
- ½ cup of evaporated milk
Preparation
- Blend all cake ingredients except for brown sugat and nuts and beat for 7 minutes with electric mixer at medium speed.
- Pour into a well greased 9 x 13 pan.
- Sprinkle with the brown sugar and nuts.
- Bake in a 400 degree F oven about 50 minutes or until tested to be done.Cool for approximately 20 minutes.
- Make glaze mixture by combining glaze ingredients and boiling for 3 minutes.
- Pour over warm cake.

Well it sounds interesting, I will give it a try although I am not a fan of coconut, but my man is, but i will still try it.

I’m always looking for good recipes and I’ll be sure to try this. The addition of the coconut and pudding will make for a rich and moist cake. Sounds wonderful!
