Vanilla and Wild Rose Petal Fairy Cakes
Dine like real fairies with these delicious and delicately flavoured vanilla and wild rose petal fairy cakes.

- When collecting your rose petals make sure that they are free from chemical sprays. Traditional garden rose petals can also be used but tend to not be as strongly flavoured or scented. Once again make sure they haven’t been sprayed and are well washed before use. This recipe makes around 30-35 cakes.
Ingredients
- 4 Eggs
- 225g/8oz Sugar
- 225g/8oz Self Raising Flour
- 2225g/8oz Butter/Margarine
- 1 teaspoon of Vanilla Essence
- A handful of wild rose petals roughly chopped
Optional Ingredients
- Optional A few drops of Rose Water for those who prefer a stronger rose flavour
- Optional strawberry jam/fruit puree
- ptional icing and extra rose petals for garnish, a nice touch for a special occasion
Method
- Preheat oven to 180C/ 350F/ Gas 4 and line bun tray with cases.
- Beat the eggs and add sugar
- Fold in the flour
- Melt the butter/margarine over a low heat until it is melted but not boiling
- Slowly add the melted butter into the mixture and mix well
- Add vanilla essence and rose water if desired.
- Carefully fold in the rose petals
- Due to using melted butter/margarine this mixture will be quite runny so spoon carefully into the cases
- Bake in the centre of the oven for around 15 minutes or until a pale golden colour.
- Cool and enjoy!
Other ideas
- Cut around and scoop out a circle off the top of each bun and fill with strawberry jam or fruit puree (Our favourite as pictured below!)
- Ice and garnish with a rose petal on top of each one
