Welsh Cakes

This is the Welsh Cake recipe from the Welsh Valleys, where I went on tour in 2006.

Ingredients

  • 1 lb self raising flour
  • 8 oz butter
  • 4 oz sugar
  • 4 oz mixed fruit
  • 1 teaspoon mixed spice
  • 2 large eggs

Preparation

Mix flour and butter to breadcrumb texture, add sugar, fruit, spice and the beaten eggs. Mix to a soft dough, roll out and cut with a cookie cutter into rounds. Cook on a low heat on a griddle until nicely browned. Put on a warmed plate and sprinkle with castor sugar. They are just yummy. This is what the Welsh miners always took in their boxes, to go down the mines on shift, as a sweet to take away the dust. Hope you enjoy troops!
