Carrot Halwa: Gajar Halwa

Here is a simple recipe for Indian style carrot pudding.

Ingredients

  • Carrots, cleaned and  grated- 1 kilogram
  • Milk-1/2 litre
  • Condensed Milk(Sweet)- 100 gram
  • Sugar- 1 cup
  • Grated on finely cut almonds and cashew nuts- 1 tablespoon
  • Clarified butter or ghee- 2 tablespoons.

Method

1. Take milk and the grated carrot in a saucepan.

2. Put the saucepan on the stove and bring the mixture to boil. Keep stirring to prevent it from sticking to sides or getting burnt.

3. Add clarified butter and sugar, continue stirring.

4.When the contents are becoming thick, add condensed milk.

5. Once they have blended in and you have a semi-dry consistency, remove from flame.

6. Garnish with the dry fruits.

Like all dishes, there are variations to the carrot halwa recipe too. You can use 1 litre of milk and not use condensed milk. You can also use unsalted butter if you cannot get clarified butter.

Carrot halwa is easy to make and best served hot.Carrot halwa can also be refrigerated too and enjoyed.

    Would this be served as a dessert? Or as a side dish? From the ingredients it seems like it could possibly be both?
