Carrot Muffins

Eager for some taste?

Ingredients

  • 2 2/3 cups all purpose flour
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 1 1/3 teaspoons baking soda
  • ¾ teaspoon salt
  • ¼ teaspoon cloves or allspice
  • 2 ½ cups carrot, shredded
  • 2 pieces medium – sized apples, peeled, cored and shredded
  • ½ to 2//3 cup desiccated coconut
  • 2//3 cup dried pineapple, briefly soaked in hot water, drain
  • 4 large eggs
  • ¾ cup plus 2 tablespoons canola oil
  • 2 teaspoons granted lemon or orange zest (or ½ teaspoon lemon or orange extract)

Method

  1. Preheat oven to 375oF. Line baking pan with muffin cups.
  2. In a bowl, sift together the first seven ingredients. Add carrots, apples, pineapples, and coconut.
  3. In another bowl, whisk together eggs, oil, and flavorings. Add to the dry ingredients. Blend well.
  4. Scoop into muffin tin, each three-fourths full. Bake for 25 to 30 minutes or until done. Cool on a cake rack.
