Chocolate Covered Honeycomb

A taste that goes back to childhood and is still enjoyed today by adults and children alike.

A great treat from childhood was homemade chocolate covered honeycomb a crunchy melt in your mouth treat.  Plus so simple to make,the following recipe makes enough to satisfy the sweetest tooth.  All you need is a saucepan some sugar,golden syrup and your own choice of chocolate.

Ingredients

  • Two cups of sugar castor is best
  • one cup of demerera or good brown sugar
  • Half a cup of golden syrup
  • Baking soda or bicarbonate of soda
  • Your choice of chocolate bar

Method

Put your saucepan on a low heat add your sugar and syrup do not stir just let your sugar and syrup tart to liquify.  When your sugar mix starts to bubble let it cook for a few minutes be carefull not to let it burn.  You just want a nice brown colour with a gorgeous toffee like smell.  Now take it of the heat and add half a teaspoon of your bicarbonate of soda now whisk your mixture and it will foam up doubling or even trebling in size carefully pour onto greaseproof paper that you have put in a high sided baking tray.

Now allow to cool when cold it becomes brittle and is easy to break,now boil some water in your saucepan put a heat proof bowl in the saucepan and melt your choice of chocolate.  When the chocolate has melted dip the larger pieces of your honeycomb and replace on geaseproof paper.  This can be quite messy and is great fun for kids,I would not let children be around for the first part as sugar when boiling is very dangerous but when cold coating with melted chocolate the only real danger is they eat more than they coat.

This sugary treat is quite versatile it can be crumbled over other desserts or ice cream as a topping it can be eaten as is or my favorite covered in chocolate.  I hope you try and enjoy this tasy sweet thanks for reading
