Chocolate Eclair

A yummy dessert.

Ingredients
- Graham Crackers
- 2 small pkgs. instant vanilla pudding
- 3 c. milk
- 1 large carton Cool Whip
Method
- Line a 9 x 13-inch glass baking dish with graham crackers.
- Mix the pudding and milk together in a large bowl.
- Fold in the Cool Whip. Spread 1/3 of the mixture over the graham crackers.
- Add two more layers, ending with graham crackers.
Topping
- 1/4 Tbsp. margarine, softened
- 2 Tbsp. cocoa
- 3 Tbsp. milk
- 1/2 tsp. vanilla flavoring
- powdered sugar
Combine the margarine, cocoa, milk and vanilla together in a saucepan and bring to a boil. Add enough powdered sugar to make the icing spreadable. Spread over top of the graham crackers and refrigerate overnight.
