Chocolate Marshmallow Drops

Another great cookie recipe.

shMakes 4 dozen

Cake

1 3/4 cups of sifted cake flour

1/2 teaspoon of salt

1/2 teaspoon of baking soda

1/2 cup of cocoa

1/2 cup of shortening

1 cup of sugar

1 egg

1/2 cup of milk

1 teaspoon of vanilla

1/2 cup of chopped walnuts

24 marshmallows, halved

Cocoa glaze

Sift together flour, baking soda, salt and cocoa. Cream shortening then add sugar gradually and cream together until fluffy. Add egg and beat will. Add flour alternately with milk, a little at a time, beating well after each addition until smooth. Add vanilla and nuts. Drop by teaspoons onto greased cookie sheets and bake at 375 degrees for 8 minutes. Remove from oven, and top each cookie with marshmallow half, placing cut side down and pressing gently. Return cookies to oven for 4 minutes. Cool and frost with cocoa glaze.

Cocoa Glaze

1/2 cup of cocoa

1 1/2 cups of confectioner’s sugarl

3 tablespoons of water

1/2 cup of butter

Sift cocoa and confectioner’s sugar in a small bowl. Heat water and butter, until butter melts. Pour over cocoa and sugar mixture and blend well. Add a few of water if needed.
