Chocolate Mousse

A recipe for a mouth watering chocolate mousse.

SERVES 4

  • 175g/6oz Plain

  • chocolate, finely chopped or grated

  • 3 tbsp Water
  • 15g/1/2 Oz Unsalted butter
  • 3 Egg yolks
  • 225 ml/8fl Oz double cream
  • 1 tbsp Vanilla caster sugar
  • 50g/2oz Chocolate flakes, to decorate

Put chocolate and water in a bowl.
Microwave on Defrost for 1-2 minutes
until the mixture melts. Remove bowl and
add butter. Stir until melted and cool for 5
minutes. Stir in egg yolks one at a time.
Leave to cool for 15 minutes.

Meanwhile whip the cream and sugar
together until soft peaks form. Reserve one
third and fold the remaining whipped
cream into chocolate mixture.

Divide into individual serving bowls. Chill
until set. Decorate with reserved cream and
chocolate flakes.
