Annie’s Chocolate Chip Oatmeal Cookies
I think of all the cookies there are out there Chocolate Chip cookies are probably the most famous, at least here in America. There are many variations on how to make them and most of them are really good; the Old-fashioned Toll-House Cookie not withstanding…it is where it all began. I have my own version and these are really good too. I add oatmeal and a touch of honey. Here is how to make them…
ANNIE’S CHOCOLATE CHIP OATMEAL COOKIES
Pre heat oven 375 degrees
Prepare cookie baking sheet (very lightly grease or spread with sheet of
baking parchment paper
In a large mixing bowl cream together
1 cup (2 sticks) butter softened (use real butter)
3/4 cup granulated sugar
3/4 cup light brown sugar
3 Tbsp. honey
2 eggs beaten
1 1/2 tsp. vanilla extract
Beat until light and creamy
Mix in until well blended
1 cup rolled oats (not the instant cereal kind)
Sift together and mix until thoroughly combined
11/2 cups plus 2 Tbsp. flour (I use the unbleached)
1 tsp. baking soda
1/2 tsp. salt
Mix in
1to 1 1/2 cups semi-sweet chocolate chips
Drop cookie batter by rounded teaspoonful on cookie sheet being sure to keep them well separated as these cookies spread while baking. (about 12 per sheet)
Bake at 375 degrees for 7-10 minutes. (slightly longer if you are making large cookies (about 12 minutes) The edges should be just starting to brown and the center
looking slightly shiny and not quite baked. It is done. Cool on baking sheet for about 5 minutes and remove from sheet to wire cooling rack to finish cooling.

I baked some cakes today and yesterday. Just my way of saving money in these crazy financial dificulties. Eventually, I’ll try and upload them on here.
