Baking Africa Cookies
I’ve been asked where I get the Africa shaped cookies which I give to children at African Art Workshops I run at events. Here is the answer…
I bake them myself. They are made from a standard shortbread recipe. The Africa Map Big Copper Cookie Cutter I use was bought from a United Kingdom catering supplies company called Splat Cooking. I paid for it through Paypal.

This is Sophie at one of the workshops with some of the Africa shaped cookies.
THE RECIPE
8oz (220gr) butter
8oz (220gr) flour
40z (110gr) rice flour
40z (110gr) caster sugar.
This is mixed together into a a smooth dough and rolled out on a floured board. The cookies are cut and placed on a greased baking tray. Bake them in an over at 300 degrees F (150 degrees C) and bake until light golden in colour. Cool and store in an airtight tin until used.

Add 1/2 cup ground teff — an Eritrean grain — to the recipe.
