Choc-Dipped Chocolate Chip Sticks Ingredients:

  • 1½ Cups (225g) of Sifted Plain Flour
  • 1 Cup (170g) of Dark Chocolate Chips
  • 1 Cup (150g) of Chopped Dark Chocolate Melts
  • ½ Cup (125ml) Vegetable Oil
  • ½ Cup (115g) of Caster Sugar
  • ½ Cup (115g) of Firmly Packed Soft Brown Sugar
  • 1 Egg
  • 1 Teaspoon of Vanilla Extract
  • ½ Teaspoon of Bicarbonate of Soda
  • ½ Teaspoon of Salt

Method:

  1. In a large mixing bowl combine the vegetable oil, the caster sugar, the soft brown sugar, the egg and the vanilla
  2. In another mixing bowl combine the flour, the bicarbonate of soda and the salt
  3. Gradually add dry ingredients to the sugar mixture and mix well
  4. Divide dough into two roughly equal portions
  5. Preheat oven to 1900C
  6. On a greased baking tray shape each dough portion into a 38cm x 7cm (15½” x 2¾“) rectangular slabs
  7. Arrange the two dough slabs on the same greased baking tray approximately 7cm (2¾“) apart
  8. Sprinkle the chocolate chips over the dough
  9. Lightly press the chocolate chips into the dough slabs by placing a sheet of baking paper over the dough slabs and then lightly roll both dough slabs with a rolling pin. Note; use just enough weight on the rolling pin to force the chocolate chips into the dough but not hard enough to force the dough slabs out of shape or size.
  10. Transfer loaded baking trays to a preheated oven and bake at1900C for 8 – 10 minutes
  11. Once cooked remove baking trays from the oven and let the slabs cool for 5 minutes on the baking trays
  12. Using a serrated knife cut slabs into 3cm (1¼“) wide strips
  13. Transfer cut choc-chip sticks from baking trays to wire racks to cool completely

Dark Chocolate Melts Coating Method:

  1. Melt chopped dark chocolate melts in a double-boiler or microwave on Medium (70%) for 1 minute. Microwave for additional 10 – 20 second intervals if required
  2. Stir melted chocolate until smooth in texture
  3. Dip one end of cooled cut choc-chip sticks in the melted dark chocolate
  4. Allow any excess melted chocolate to drip off before placing the choc-dipped chocolate chip sticks back on the wire racks to set
  5. Once the chocolate has set transfer choc-dipped chocolate chip sticks to an airtight container ready to be consumed

Serving:

  • These portions will yield around 3 dozen scrumptious choc-dipped chocolate chip sticks
