Chocolate-chip and Cinnamon Cookies

Budget friendly, scrumptious chocolate-chip and cinnamon cookies are an easy to make treat ideal for cookie jars, lunch boxes, as accompaniment with beverages such as coffee, tea, milk, Milo, malted smoothies, hot chocolate, Mocha etc. or to serve with a desert.

Chocolate-Chip and Cinnamon Cookie Ingredients:
- 3 Cups (450g) of Sifted Plain Flour
- 12/3 Cups (270g) of Milk Chocolate Chips
- 1 Cup (250g) of Softened Butter
- ¾ Cup (170g) of Caster Sugar
- ¾ Cup (165g) of Firmly Packed Soft Brown Sugar
- 2 Eggs
- 1 Teaspoon of Vanilla Extract
- 1 Teaspoon of Bicarbonate of Soda
- 1 Teaspoon of Ground Cinnamon
- 1 Teaspoon of Salt
Method:
- In a large mixing bowl cream together the softened butter, the caster sugar and the soft brown sugar until light and fluffy
- Beat in eggs, one at a time
- Beat in the vanilla extract
- In another mixing bowl combine the flour, the bicarbonate of soda, the ground cinnamon and the salt
- Gradually add dry ingredients to the creamed mixture and mix well
- Fold in the milk chocolate chips
- Preheat oven to 1800C
- Drop rounded tablespoons of dough about 5cm (2”) apart onto non-greased baking trays
- Transfer loaded baking trays to a preheated oven and bake at1800C for 10 – 12 minutes or until golden brown
- Once cooked remove baking trays from the oven and transfer cookies to wire racks to cool
- When cooled completely transfer chocolate-chip and cinnamon cookies to an air tight container ready for consumption
Serving:
- These portions will yield around 3 dozen scrumptious chocolate-chip and cinnamon cookies
- Chocolate-chip and cinnamon cookies are great when served alongside beverages such as coffee, tea, milkshakes, malted smoothies or a piping hot Mocha
- They also make great additions to a mixed cookie jar/plate or as a lunch box treats and are very much welcomed when served atop deserts with whipped cream, ice cream or custard.
