Chocolate Fridge Chin.

Our simple Chocolate fridge chunks recipe makes the most of storecupboard ingredients, and there’s hardly any cooking involved.

PREPARATION TIME: 10 MINUTES, PLUS CHILLING COOKING TIME: 5 MINUTES MAKES 25 SQUARES

EASY / PREPARE AHEAD / FREEZE

1 x 300g pack chocolate digestive biscuits

or chocolate-chip cookies

100g (4oz) good-quality white chocolate, roughly chopped

100g (4oz) dried cherries or cranberries

100g (4oz) butter

100g (4oz) dark chocolate, broken into chunks

you will need:

1 x 18cm (7in) square tin, lined with clingfilm

Put the biscuits in a polythene bag and crush with a rolling pin roughly into coarse crumbs. Tip the crumbs into a large bowl and add the chopped white chocolate and dried fruit.

Heat the butter with the dark chocolate in a small pan over a low heat until just melted. Pour over the biscuit mixture and mix well together. Spoon into the tin. Chill for at least 1 hour in the fridge, until firm. Using a sharp, heavy knife, cut into 25 squares and serve.

Keep the squares in a rigid container and freeze for up to one month. Before serving, thaw at room temperature or in the fridge. Per square: 143 calories, 9g fat <5g saturated), 16g carbohydrate
