Coconut Chocolate-chip Cookies

Well-loved, coconut chocolate-chip cookies are another easy to make budget friendly treat equally at home in the cookie jar or as lunch box treats.

Coconut Chocolate-Chip Cookie Ingredients:
- 1¼ Cups (185g) of Sifted Plain Flour
- 1 Cup (170g) of Dark Chocolate Chips
- ¾ Cup (170g) of Caster Sugar
- ½ Cup (125g) of Softened Butter
- ½ Cup (30g) of Flaked Coconut
- 1 Egg
- ½ Teaspoon of Coconut Essence
- ½ Teaspoon of Bicarbonate of Soda
- ½ Teaspoon of Freshly Ground Sea Salt
Method:
- In a medium mixing bowl cream together the softened butter and the caster sugar until combined
- Beat in the egg and the coconut essence
- In another mixing bowl combine the sifted plain flour, the salt and the bicarbonate of soda
- Gradually add the combined dry ingredients to the creamed mixture and mix well
- Stir in the chocolate chips and the flaked coconut
- Preheat oven to 1900C
- Drop tablespoons of cookie dough 5cm (2¼”) apart onto non-greased baking trays
- Transfer loaded baking trays into preheated oven and bake at 1900C for 10 – 12 minutes or until golden brown
- When cooked remove from the oven and transfer cookies to wire racks to cool
- Once the coconut chocolate-chip cookies have cooled completely transfer them to an airtight container ready for consumption
Serving:
- These portions will yield around 1½ dozen scrumptious coconut chocolate-chip cookies
- Coconut chocolate-chip cookies are awesome when served alongside beverages such as a cup of coffee, café late, Mocha, tea, glass of milk or milkshakes etc.
- They also make a very worthwhile contribution to a mixed cookie jar/plate as well as lunch box treats for kids of all sizes.
