Crispy Gingerbread Men Cakes

Not the traditional gingerbread man recipe but one with a twist – enough to feed a football team.

Make enough of these to feed a football team – this recipe will make 12 crispie cakes.

Ingredients

250g butter

100g golden syrup

200g mini marshmallows (alternatively you can cut larger ones into samll pieces)

5 cups puffed rice cereal

1 teaspoonful vanilla essence

1/2 teaspoonful ginger essence

150g ready to roll icing in the colour of your favourite football team

tube of gel icing

Utensils

wooden spoon

mixing bowl

medium sized cup

medium sized saucepan

teaspoon

rolling pin and board

Gingerbread man shaped pastry cutter or a sharp knife and a steady hand

large plate

shallow tin – rectangular or square

Method

  • Melt the butter in a medium sized saucepan over a low heat
  • Add the marshmallows and mix together
  • Add vanilla essence and stir
  • Add ginger essence and stir
  • Add the syrup still stirring over the low heat until it’s all blended together
  • Add the rice cereal and mix well so all the cereal is coated
  • Empty into a shallow tin and press down with wooden spoon until flat
  • Put into fridge for 20 minutes
  • When it’s half set use the gingerbread man cutter to make football players
  • Roll out the icing on the board until it’s quite thin and then cut t-shirts for the men (the best way to do this is to use the gingerbread man cutter but then cut off the head, legs and arms so you’re left with a t-shirt shape that fits perfectly
  • Write numbers on the T-shirts with the gel icing
  • Put back into the fridge for at least half an hour before serving
  • Enjoy with friends!
