Crunchy Peanut Butter Cookies

Energy-packed crunchy peanut butter cookies are easy to make, take anywhere snacks that really do travel exceptionally well. They are brilliant to have in the car as travel snacks to help combat road fatigue and the carnage it creates.

Crunchy Peanut Butter Cookie Ingredients:

  • ½ Cup (75g) of Sifted Plain Flour
  • ¼ Cup (60g) of Softened Butter
  • ¼ Cup (60g) of Smooth Peanut Butter
  • ¼ Cup (55g) of Caster Sugar
  • ¼ Cup (55g) of Firmly Packed Soft Brown Sugar
  • ¼ Cup (25g) of Quick-Cook Porridge Oats
  • ¼ Cup (20g) of Lightly Crushed Granola
  • 1 Egg
  • ¼ Teaspoon of Vanilla Extract
  • ¼ Teaspoon of Bicarbonate of Soda
  • 1 Pinch of Salt

Note: Because it is most advisable to use a higher quality smooth peanut butter in order to produce cookies of a consistently superior quality the use of reduced-fat peanut butter or most generic brands of peanut butter cannot be recommended. In short, they simply don’t cut it.

Method:

  1. In a large mixing bowl cream together the softened butter, the peanut butter, the soft brown sugar and the caster sugar until light and fluffy
  2. Beat in the egg and vanilla extract
  3. In another mixing bowl combine the sifted plain flour, the quick-cook porridge oats, the bicarbonate of soda and the salt
  4. Once combined, gradually add the dry ingredients to the creamed mixture and mix well
  5. Stir in the lightly crushed granola
  6. Preheat oven to 1800C
  7. Drop rounded teaspoons of dough about 7cm (2¼”) apart onto non-greased baking trays
  8. Slightly flatted the drop cookie dough using a fork dipped in flour
  9. Transfer loaded baking trays to preheated oven and bake at 1800C for 10 – 12 minutes or until slightly browned
  10. Once cooked remove the crunchy peanut butter cookies from the oven and allow them to cool on the baking trays for 5 minutes before transferring them to wire racks to cool completely
  11. When cooled completely it is time to transfer the crunchy peanut butter cookies to an airtight container ready to be served
