Dark Chocolate Chip Cookies with Orange Essence

This recipe combines the great taste of chocolate and orange and is pretty healthy in comparison to many cookie recipes. It uses whole wheat flour and replaces some of the butter traditionally used in cookie recipes with heart healthy canola oil. Orange oil can be purchased from specialty food stores like Williams Sonoma. If you can’t find orange oil, a teaspoon of orange zest will give great flavor too.

Ingredients

  • 1/2 stick of butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup canola oil
  • 1 egg
  • 1/2 cup whole-wheat pastry flour
  • 1/2 cup all purpose flour
  • 1-2 drops of pure orange oil
  • 1/4 tsp salt
  • 2/3 cup dark chocolate chips
  • Preheat oven to 350.

Method

In large bowl, mash butter and sugar.  Add oil and egg, beat until creamy.  Mix in orange oil.  In medium bowl, whisk flour and salt.  Add flour mixture to wet ingredients and mix.  Be careful not to overmix.  Stir in chocolate.  Spoon batter onto ungreased cookie sheet.  Bake 12 minutes.  Transfer cookies to a cooling rack.
