Diabetic Raisin Cookies
Diabetic Raisin Cookie recipe.
My boyfriend is diabetic, but still enjoys treats. Of course he does, who doesn’t? So obviously I’ve had to research what he can and can’t eat. The following recipe is for Diabetic Raisin Cookies.
Ingredients
- 1/2 c. raisins
- 1/4 c. non-fat dry milk
- 1/4 c. ice water
- 1/2 c. margarine
- 1/2 c. brown sugar twin
- 1 tsp. vanilla
- 1 egg
- 1 c. flour
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1 c. rolled oats
Method
- Right, so firstly you need to whip the non fat dry milk with the ice water until you see stiff peaks start to form. I find this normally takes about 5 minutes.
- Next, boil the raisins in water for 2 minutes then drain.
- Combine the margarine, sugar twin, egg and vanilla and beat for about a minute. Stir in dry ingredients the raisin liquid and beat this for about 2 minutes. Following this stir in the rolled oats and raisin.
- Fold in whipped non fat milk until a thick consistency is formed.
- Drop onto non greased cookie sheet or baking tray and bake at 375 degrees for about 17-20 minutes.
