Drop Sugar Cookies

Energy-packed drop sugar cookies are easy to make, take anywhere snacks that are brilliant to accompany you on your travels to help combat road fatigue and the carnage it creates.

Drop Sugar Cookie Ingredients:
- 2 Cups (300g) of Sifted Plain Flour
- ¾ Cup (170g) of Caster Sugar
- 2/3 Cup (160ml) of Canola Oil
- 2 Eggs
- 2 Teaspoons of Vanilla Extract
- 2 Teaspoons O Baking Powder
- 1 Teaspoon of Grated Lemon Zest
- ½ Teaspoon of Freshly Ground Sea Salt
- Additional Sugar or Colored Sugar (for flattening and presentation)

Method:
- In a large mixing bowl beat together the canola oil, the caster sugar, the eggs, the vanilla extract and the lemon zest until blended
- In another mixing bowl combine the sifted plain flour, the baking powder and the salt
- Once combined, gradually add and beat the dry ingredients into the egg mixture and mix well
- Preheat oven to 1800C
- Drop rounded teaspoons of dough about 5cm (2”) apart onto greased baking trays
- Sift some sugar or colored sugar into a small bowl
- Coat the bottom of a glass with non-stick cooking spray
- Dip glass into the sifted sugar
- Use the bottom of the prepared glass to flatten the cookies, redipping in the sugar as required
- Transfer loaded baking trays to preheated oven and bake at 1800C for 10 – 12 minutes or until the edges are lightly browned
- Once cooked remove the drop sugar cookies from the oven and allow them to cool on the baking trays for a few minutes before transferring them to wire racks to cool completely
- When cooled completely transfer the drop sugar cookies to an airtight container ready for serving
