Dusted Pecan Cookies

Dusted pecan cookies are just so easy to make and unbelievably palate pleasing to eat. They also make excellent additions to any cookie jar or mixed cookies plate and may be consumed on their own, in lunch boxes or as accompaniment to beverages such as coffee, tea, milk, Milo, malted smoothies, hot chocolate, Mocha etc.

Dusted Pecan Cookie Ingredients:
- 2 Cups (300g) of Sifted Plain Flour
- 1 Cup (250g) of Softened Butter
- 1 Cup (120g) of Chopped Pecan Nuts
- ½ Cup (60g) of Confectioners’ Sugar
- 1 Tablespoon of Water
- 2 Teaspoons of Vanilla Extract
- Additional Confectioners’ Sugar (for dusting)
Method:
- In a large mixing bowl cream together the softened butter and confectioners’ sugar until mixture becomes light and fluffy
- Gently beat in the water and the vanilla extract
- Gradually add the flour and mix well
- Fold in the chopped pecan nuts
- Preheat oven to 1500C
- Roll cookie dough into 3cm (1¼”) diameter balls
- Place cookie dough balls about 5cm (2”) apart onto non-greased baking trays
- Using your fingers flatten dough balls somewhat
- Transfer loaded baking trays to preheated oven and bake at 1500C for about 20 minutes
- Once cooked remove the cookies from the oven and transfer to wire racks to cool
- When cooled dust the cookies with finely sifted confectioners’ sugar
- Once dusted; transfer the dusted pecan cookies into an airtight container to await consumption

These portions will yield 2½ dozen dusted pecan cookies

Dusted pecan cookies are scrumptious when served along with beverages such as coffee, tea, Mocha, Milo, milkshakes, malted smoothies or hot chocolate. They also make great additions to a mixed cookie jar/plate or as lunch box treats.
