Fruity Oatmeal Cookies
Oats contain soluble fiber that sweeps excess cholesterol which can clog arteries and lead to heart disease.
Ingredients:
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp iodized fine salt
1/2 cup shortening
1/4 cup margarine
1 1/2 cups brown sugar
1 can fruit cocktail, drained (reserve 2 tbsp syrup)
1 tsp vanilla
1 pc egg
3 cups quick cooking oats
Directions:
1. Preheat oven to 350ºF. Grease baking sheet. Set aside.
2. Sift flour, baking soda and salt. Set aside.
3. Cream shortening, margarine, brown sugar, fruit cocktail syrup, vanilla and egg.
4. Add flour mixture then fruit cocktail and oatmeal.
5. Drop batter using a small scooper (about 1 1/2 tbsp) on a baking sheet 2″ apart. Flatten slightly. Bake for 15 minutes. Turn and bake for another 3-5 minutes. Cool on rack.

This is such a delicious recipe. It makes me hungry just reading it, especially since oatmeal cookies are my most favorite kind of cookie. I really love any kind of oatmeal cookie. Thank you so very much for sharing.
