Healthy Cookie Recipe

These nutritious cookies are great for breakfast or a snack!

Crunchy Drop Cookies

2 cups whole wheat flour

1 teaspoon baking powder

3/4 teaspoon salt

1 teaspoon ground cinnamon

2 eggs

1/4 cup milk

1/2 teaspoon vanilla

1/2 cup milk

1/2 cup each peanut butter, honey, and lightly packed brown sugar

1/2 cup butter or margarine softened

1/2 cup semisweet chocolate or carob baking chips

1/2 cup chopped, toasted almonds, or walnuts

1/2 cup each flaked coconut, raisins, and granola cereal

Combine whole wheat flour, baking powder, salt, and cinnamon; set aside

In a large bowl, place eggs, milk and vanilla; beat with an electric mixer. 

Beat in peanut butter, honey, born sugar, and butter until creamy.

Stir in flour mixture until blended, then stir in chocolate chips, nuts, coconut, raisins, and granola until blended.

Drop batter, 1 heaping teaspoon at a time, about 1 inch apart on lightly greased baking sheets.  Bake in a 375 degree oven for about 10 minutes or until cookies are golden on the bottom.  Cool on rack.  Makes 5 dozen cookies.

    I love both peanut butter and honey. Will have these for breakfast! A nice, healthy breakfast.
