Holiday Baking: Spritz Cookies

Get that spritz cookie/biscuit press out of the cupboard! Spritz Cookies are delicious, fast and easy to make. Decorated or plain, Spritz Cookies are a holiday hit!

Note: While baking Spritz Cookies, let the baking sheets/tins cool off before pressing out the next batch. Otherwise they might not form properly.

Ingredients:

*6 oz/ 1 1/2 sticks unsalted butter
*1/2 c white sugar
*1 tsp vanilla essence/extract
*2 eggs, beaten
*2–2 1/2 c plain/AP flour
*1/4 tsp salt
*sprinkles, coloured sugars, dragees (optional)

Preparation:

Cream the butter and sugar together in a large bowl. Add in the vanilla and the beaten eggs. Beat well.

Sift the flour and salt in a separate bowl. Add to the butter/sugar/egg mixture. The dough should be thick but soft enough to go through the spritz/cookie press.

Oven at 375 F

Press out the Spritz Cookies onto cool buttered baking sheets. Use a variety of shapes such as stars, Christmas trees, rings etc. Add sprinkles, coloured sugars or dragees if desired. Bake at 375 F for 8–10 minutes, until the edges are lightly browned. Cool on racks. Store in airtight tins.

Serve Spritz Cookies on a decorative platter with Biscochitos and Wedding Cookies.
