Holiday Baking: Wedding Cookies

Delicious Wedding Cookies are very simple to make with chopped nuts, butter, sugar and flour. But why wait for a wedding to enjoy them? Enjoy these festive Wedding Cookies any time.

Note: Any type of nuts will work in the Wedding Cookies recipe. Use what is liked best. Try to make certain the nuts are fresh.

Ingredients:

*8 oz/ 2 sticks unsalted butter, room temperature
*2 oz/ 1/2 c icing/confectioner’s sugar
*1/2 tsp vanilla essence/extract
*8 oz/ 2 c plain/AP flour
*dash of salt
*8 oz/ 2 c finely chopped walnuts

To finish:

*icing/confectioner’s sugar to dust, in a shallow bowl

Preparation:

Oven at 350 F

Cream the sugar and butter together until fluffy. Add the vanilla and mix well.

Mix the flour, salt and chopped nuts in a large bowl. Add the flour/nut mixture to the creamed sugar/butter. Don’t over mix to avoid toughening the dough.

Roll the dough into 1-inch balls. Adjust the flour if the dough doesn’t quite hold together. Place the balls of dough on an ungreased baking sheet; they won’t spread much.

Bake at 350 F until the Wedding Cookies are light brown. Roll them in the icing/confectioner’s sugar while they are still hot. Let cool on a rack. Reroll the Wedding Cookies in the sugar after they have cooled. Store airtight at room temperature.

Wedding Cookies are perfect served with Churros and Mexican Hot Chocolate!
