Holiday Fruit Cookies

Bake these goodies, fill your homes with heartwarming aroma of the season and just enjoy the products of your labor; the holidays will always be the best times to do some baking. Don that apron!

Holiday Fruit Cookies

1 cup (2 sticks) unsalted butter, softened

1/2 cup white sugar

1/2 cup brown sugar, firmly packed

2 large eggs, at room temperature

1/2 cup sour cream

1 teaspoon almond extract

2-1/2 cups sifted flour

1 teaspoon baking soda

1/2 teaspoon iodized salt

1/2 cup dried philippine mangoes, snipped into small pieces

1/2 cup raisins

1 cup chopped pitted dates dredged with 2 teaspoons flour

1 cup walnuts, coarsely chopped

Cream butter and sugars, then add eggs, sour cream and almond extract.

Stir in flour, baking soda and salt. Fold in fruits and nuts. Refrigerate dough for at least 1 hour.

Onto ungreased cookie sheets

(for easy removal, line cookie sheets with parchment paper), drop rounded teaspoons (the size of walnuts). A small ice cream scooper can be used to ensure uniform cookie sizes. Bake in preheated

375 F for 10 to 12 minutes or center of cookie is set and edges appear lightly browned. Use always cold cookie sheets with each batch. Makes about 6 dozen cookies.
