They pair well with a cup of hot mulled cider, hot cocoa or a cold glass of milk. They also package up nicely as a hostess gift.
Spice Cookies Ingredients List
· 6 tablespoons granulated sugar
· ¾ stick unsalted butter, softened
· 1 ½ teaspoon molasses
· ½ teaspoon baking soda
· ¼ teaspoon salt
· ¼ teaspoon pepper
· 1 ½ teaspoons of warm water
· ½ teaspoon ground cardamom
· ½ teaspoon cinnamon
· 1 cup all-purpose flour
Spice Cookies Baking Instructions
Preheat the oven to 350 degrees Fahrenheit and grease two large cookie sheets. Then place the spices, flour and salt into a bowl and whisk them together.
Next combine the baking soda and warm water until the baking soda is completely dissolved. Proceed by adding the molasses to the water and baking soda mixture.
Take out a third bowl and combine the butter and sugar together using an electric mixer. Beat the butter and sugar mixture until it is fluffy in texture and pale in color.
Once the desired consistency is reached add the baking soda mixture to the butter mixture. Beat it together and then add in the flour mixture. Mix it all together until you are able to take a piece of the mixture and form dough balls with your hands.
Roll the dough into small balls and place them onto the greased cookie sheet. Place each ball approximately 2 inches apart from one another to allow the dough to spread out during the cooking process.
Dip a fork in flour and use it to lightly press down onto each dough ball so that each ball becomes 1 ¼ inch rounds.
Repeat this procedure until all the dough has been used. Place the cookie laden cookie sheets into the oven and allow them to bake until they develop a golden brown color.
Remove the cookies from the oven and let them cool. Once they are cool you can transfer the cookies to an airtight container where they will remain fresh for approximately 7 days.
Note: This recipe will yield approximately 4 dozen cookies.
