Mummu’s Old Fashioned Scottish Shortbread
This is a Traditionally Scottish Dessert.
I Have Been Making This Recipe For Thirty Years.
I Give Some as Christmas Gifts Every Year.
Preheat oven to 300 degrees F
Cream in a bowl 1 lb of salted butter
Blend in 1 cup of icing sugar
Gradually stir in 4 cups of all purpose white flour.
Knead well to blend in the last of the flour.
Press dough evenly unto an ungreased baking sheet.
I actually use the bottom of my broiling pan.
prick with fork and press fork along edges to make a design
sprinkle with granulated sugar.
bake for about 75 minutes or until the edges are slightly brown.
Cut in bars while still warm but let cool before lifting.
The secret of this is the butter and the low temperature.
You may use sprinkles instead on top and you can roll out the dough
and cut cookie shapes before baking.
I usually just cut in bars or squares
and serve at Christmas and give as gifts
