Old Fashioned Sugar Pecan Cookies

Delightful old recipe for light pecan cookies.

Ingredients

  • 3 large eggs, whites only
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped

Method

Whip egg whites in a chilled bowl until stiff peaks form. Add sugar and vanilla, continue beating until sugar and vanilla are incorporated. Mixture should form a peak when dropped from a spoon, gently fold in pecans. Spoon into icing bag with large piping tip, or by the tablesoon full onto parchment covered cookie sheet.

Bake at 225 degrees for 2 hours.
