Peanut Buttter Cup Cookies

Peanut butter cup cookies are easy to make, energy-packed, take anywhere snacks that really do travel exceptionally well. They are brilliant to have in the car as travel snacks to help combat road fatigue and the carnage it creates.

Peanut Butter Cup Cookie Ingredients:

  • 1 Cup (126g) Chopped Peanut Butter Cups (42g each)
  • 1 Cup (170g) of Dark Chocolate Chips
  • 1 Cup (150g) of Sifted Plain Flour
  • ½ Cup (115g) of Caster Sugar
  • ½ Cup (115g) of Firmly Packed Soft Brown Sugar
  • ½ Cup (125g) of Softened Butter
  • 1/3 Cup (90g) of Smooth Peanut Butter
  • 1 Egg
  • 1 Teaspoon of Vanilla Extract
  • ½ Teaspoon of Bicarbonate of Soda
  • ¼ Teaspoon of Freshly Ground Sea Salt

Method:

  1. In a large mixing bowl cream together the softened butter, the peanut butter, the soft brown sugar and the caster sugar until combined
  2. Beat in the egg and vanilla extract
  3. In another mixing bowl combine the sifted plain flour, the bicarbonate of soda and the ground sea salt
  4. Once combined, gradually add the dry ingredients to the creamed mixture and mix well
  5. Stir in the chocolate chips and the chopped peanut butter cups
  6. Preheat oven to 1800C
  7. Drop rounded tablespoons of dough about 5cm (2”) apart onto non-greased baking trays
  8. Transfer loaded baking trays to preheated oven and bake at 1800C for 10 – 12 minutes or until edges are slightly browned
  9. Once cooked remove cookies from oven and allow the cookies to cool on the baking trays for 2 minutes before transferring them to wire racks to cool completely
  10. When cooled transfer the peanut butter cup cookies to an airtight container ready for consumption
