A great cookie makes any day a good one!

Fudge Cookie Cakes

vegetable oil spray

1 box devil’s food cake mix

2  3.5 ounce jars pureed baby food prunes

1/2 teaspoon instant coffee

3 tablespoons powdered sugar

2 egg whites

Preheat oven to 350 degrees.  Spray a large baking sheet with vegetable oil spray.  In a medium sized mixing bowl, beat the cake mix, prunes, coffee granules, and egg whites with an electric mixer at low speed until blended.  Use a tablespoon to spoon about half the cookie dough onto the baking sheet.  Make about 24 mounds that are 1 inch apart.  Bake for 8 minutes.  Remove the baking sheet and let puffy-looking cookies cool completely on a baking rack.  Repeat with the rest of the dough.  Sprinkle the cooled cookies with powdered sugar using a fine sieve.  If you’d like, frost the cookies.

Oatmeal Blueberry Cookies

3/4 cup water

1 cup dried sweetened blueberries, strawberries, cranberries etc.

1/2 cup firmly packed dark brown sugar

7 tablespoons margarine, softened

1/4 cup sugar

1 large egg

2 tablespoons milk

1 teaspoon vanilla

3/4 cup all purpose flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 1/2 cups uncooked quick-cooking oats

Preheat oven to 350 degrees.  Bring the water to a boil.  Remove from heat.  Stir in blueberries.  Let stand for 5 minutes to soften.  Then, in a medium bowl, stir together the brown sugar, margarine, and sugar.  Beat with an electric mixer set on high until mixture is smooth.  Add the egg, milk and flavoring.  Beat on medium speed until smooth.  Add the flour, cinnamon, baking soda, and salt.  Beat on medium speed until well blended.   Drain the blueberries.  Stir the blueberries into the cookie dough.  Spray a nonstick cookie sheet with vegetable oil spray.  Using a spoon, drop the cookie dough onto the cookie sheet in 1 tablespoon mounds about 2 inches apart, using about half the dough.  Bake for 9 minutes, or until golden on the edges.  Remove the cookies from the oven.

Soft Cinnamon Molasses Cookies

1 cup sugar

1 tablespoon butter

2 eggs

2 tablespoons molasses

2/3 cup sour milk or buttermilk

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon ground cloves

salt to taste

2 cups flour

Combine sugar, butter, eggs, molasses, sour milk, baking soda, cinnamon, cloves and salt in a bowl; mix well.  Add enough flour to make a batter which can be dropped from a spoon; mix well.drop by spoonfuls onto cookie sheet.  Bake at 400 degrees until light brown.  Cool on wire rack.
