Scary Ginger Cookies

With Hallowe’en approaching fast here’s a reliable recipee for ginger cookies that you can decorate with witches, spider webs and ghoulish designs.

With Hallowe’en fast approaching now is the time to make up a large  batch of ginger cookie dough . Cut into pumpkin, bat or skull shapes with appropriate cutters or simply use an icing pen to decorate round cookies with spider webs or ghoulish faces after baking.

Try this simple, reliable recipe, it will make about 30 cookies.   

700 gms plain flour

1    rounded teaspoon Bicarbonate of soda   

2    rounded teaspoon ground Ginger

250 gms block margarine    

350 gms caster sugar

2    eggs

250 gms  golden syrup (4 tablespoon)               

Sieve together the first three dry ingredients.         

Rub the fat into this mix using the fingertips.              

Stir in the sugar.              

Add the beaten eggs and the syrup              

Mix all well together to make a smooth dough.  

Store the dough in the refrigerator until firm.               

Roll out the dough on a floured surface to 6mm. thick 

Cut to shape

Place well apart on greased baking trays              

Bake at 180C for 8-10 minutes until golden. (they will still be soft to the touch) 

ool for a few moments on the baking tray then transfer to a rack to cool completely.               

Decorate when cold. 

Store in an airtight tin.
