Short Crust Pastry

Home-made easy to prepare Indian version of cookie.

Ingredients:

100gms All Purpose Flour (Maida)
50gm Butter
1/4 tsp salt
1/4 tsp Baking Powder
11/2 tbsp Ice Cold Water

Method:

1. In a bowl add flour, salt, butter and baking powder and cool it by placing it in the refrigerator for about 15 – 20 minutes.

2. Remove the bowl from the refrigerator and mix the mixture with soft hands mashing to make like bread crumbs. ( remember not to mix the mixture hard with pressure and for long time).

3.Hand knead the mixture by adding little by little ice-cold water and being careful not to over knead. Try to add water as little as you can.

4. Use dry flour on the hands to take small piece of ball from the dough not larger than a golf ball, place it in the counter and roll it with the help of rolling pin into a circle about 1/8 inch thick.

5. Now with the help of cookie cutter , cut the shape from the centre of the circle and place in on baking sheet and by using a toothpick poke few spots on the unbaked cookies placed on the tray.

6. Preheat oven to 230ºF. Place the baking tray in the oven for about 10 – 15 minutes until the bottom of pastry turns red.

7. Once the pastry turns red from bottom remove tray

from oven and let the cookies sit on the pan for few minutes.

8. Using spatula, lift the pastry and place it on a wax paper or the cooling grill and cool the pastry.

Enjoy your home-made short crust pastry.
