Sugar-and-spice Cookies

Sugar-and-spice cookies are surprisingly easy to make treats that; over a cup of tea or coffee, will brighten up any dreary day. So pack some in your lunch box.

Sugar-and-Spice Cookie Ingredients:
- ¾ Cup (185g) of Butter
- 1 Cup (230g) of Caster Sugar
- 1 Egg
- ¼ Cup (90g) of Treacle
- 2 Cups (300g) of Sifted Plain Flour
- 1 Teaspoon of Bicarbonate of Soda
- 1½ Teaspoons of Ground Ginger
- 1 Teaspoon of Ground Cinnamon
- ¾ Teaspoon of Ground Cloves
- ½ Teaspoon of Freshly Ground Sea Salt
Method:
- In a large mixing bowl cream together the ¾ cup (185g) of butter and caster sugar until mixture becomes light and fluffy
- Beat in the egg and the treacle
- In another mixing bowl combine the flour, the bicarbonate of soda, the ground ginger, the ground cinnamon, the ground cloves and the salt
- Gradually add the dry ingredients to the creamed mixture and mix well
- Preheat oven to 1800C
- Drop rounded tablespoons of dough about 5cm (2”) apart onto greased or baking paper lined baking trays
- Place loaded baking trays into preheated oven and bake at 1800C for 8 – 10 minutes or until golden brown
- When cooked, remove from oven and transfer the sugar-and-spice cookies to wire racks to cool
- Once cooled transfer the cookies to an airtight container ready to be served
Yield: These portions will yield around 4 dozen dreamy sugar-and-spice cookies
Serving:
- Sugar-and-spice cookies are a great favorite with the kids, so they make really wonderful lunch box treats
- You may also serve them with beverages such as a cup of coffee, café late, Mocha, tea, milk, milkshakes etc.
- Sugar-and-spice cookies are always a welcome sight in any cookie jar or plate of assorted cookies.
