Sugar Free Apricot and Honey Cookies
A healthy approach to snacks. These are great for children’s lunch boxes or to beat that midmorning snack attack.

You can substitute any of your favourite dried fruit for the apricots; such as sultanas, currants, candied peel, mango, or cranberries. Cherry and coconut is really nice too. Have fun and experiment and a few spices too!
Ingredients
- 4 Tablespoons of Honey
- 100g Or 3.5 oz Margarine
- 200g Or 7oz of Plain Flour
- One Medium Egg or the equivalent egg substitute
- Splash of Milk
- 60g Or 1.5oz Dried Apricots (or other dried fruit)
Method
- Firstly, preheat your oven to 180 degrees C, 350 degrees F or Gas Mark 4
- In a small pan, melt the margarine and honey over a low hear.
- In a large bowl, sieve your flour, and egg substitute if using it, also any spices at this point if you would like to.
- Add the margarine and honey to flour and if not using egg substitute add your beaten egg to the mix now.
- Chop your dried apricots of other fruit if necessary into small pieces, set a few pieces to one side to garnish, add the rest to the mix and stir well.
- Add a splash of milk, use your judgement here, you are aiming for a nice dough texture.
- Dust a clean surface with flour and roll out your dough until it is about ¼ inch thick and cut out shapes using the cutter of your choice.
- Add small pieces of fruit as garnish
- Place these on a lightly greased tray and place in the centre of the oven, bake for around 10 -15 minutes or until a light golden brown.
- Allow to cool on a wire rack and enjoy!
