Sugar Free Cranberry and Almond Cookies

A healthy approach to snacks. These are great for children’s lunch boxes or to beat that midmorning snack attack!

You can substitute any of your favourite dried fruit for the cranberries; I sometimes use apricots with a little honey for a sweeter tasting cookie. Cherry and coconut is really nice too. Have fun and experiment!

Ingredients

  • 100g Or 3.5 oz Plain Flour
  • 100g Or 3.5 oz Margarine
  • 50g Or 1.5 oz Almonds (ground)
  • 50g Or 1.5oz Dried Cranberries
  • ½ teaspoonful Baking Powder
  • One Medium Egg or the equivalent egg substitute
  • 3 tablespoonful of Fruit Puree. Sugar free jam can also be used (please be aware if using sugar free jam it is likely to contain artificial sweeteners, not so healthy!)

Method

  1. Firstly, preheat your oven to 180 degrees C, 350 degrees F or Gas Mark 4
  2. In a large bowl cream together the margarine and fruit puree until it is light and fluffy
  3. Next, beat your egg and fold into the mixture (if you are using egg substitute you will need to add this to your flour)
  4. Add your dried cranberries and ground almonds and mix well
  5. Sieve the plain flour and baking powder in the mixture and mix well until you have a light dough, if you have used an egg substitute you may need to add a couple of tablespoonfuls of water to get the consistency right.
  6. Roll out to about ¼ inch thickness onto a well floured surface and cut up using the cookie cutter of your choice.
  7. Place them on a well greased baking tray and bake in the centre of the oven for around 20 minutes.  
  8. Allow to cool on a wire rack and enjoy!

So easy even a child can make them!
