Sugar-free Cookies: Honey and Granola Cookies

Here is a yummy and practical recipe for a sugarless cookie.

Many years ago, my friend’s mother used to spoil us with these as an after-school treat. Fortunately, she gave me the recipe, though I was still too young to appreciate it at the time. I’m glad she had the foresight to do so. I remember making them once for a grade 8 school project (something to do with male/female roles in the home—obviously a long time ago!), and they were a big hit!

I’ve since embellished the recipe a bit, but it is still a great, sugar-free recipe for tasty cookies, and personally, brings back wonderful memories of my youth and days gone by.

 This recipe makes approximately 2 to 2 ½ dozen cookies.

For this recipe, you will need:

2 mixing bowls

2 greased cookie sheets

½ cup vegetable oil

½ cup honey

2 medium eggs, beaten

1-teaspoon vanilla extract

1-¼ cups whole-wheat flour

½ teaspoon salt

½ teaspoon baking soda

1-cup granola

½ cup chopped almonds or walnuts (optional)

  1. Preheat over to 325 degrees.
  2. Mix oil and honey together in a bowl.
  3. Stir in the eggs and vanilla.
  4. In a separate bowl, combine the flour, salt and baking soda.
  5. Stir into the honey mixture.
  6. Add granola and nuts, mix well.
  7. Drop dough by teaspoons onto a greased cookie sheet.
  8. Bake for approximately 10 to 12 minutes. Use your best judgment!
  9. Let cookies cool for 2-3 minutes, then carefully remove to rack for further cooling.

These cookies are very versatile. Enjoy them as part of healthy breakfast or lunch, or an after school/work snack to satisfy you until dinnertime.

They are, of course, a wonderful dessert item as well, to be enjoyed with your favorite cozy hot beverage, (or glass of milk for the milk-and-cookies crowd).
