The Ultimate Golden Gingerbread

I would have called this The-Most-Unbelievably-Amazing-And-Easy-Gingerbread-You-Will-Ever-Taste-In-Your-Entire-Life Recipe, but it made the title a bit long. So I’ve put it here instead. It is, by the way. Trust me, it came from the wonderful Mrs Le-Brun, my second mother if ever I had one.

- 1.5ml/ 1/4 tsp bicarbonate of soda
- pinch of salt
- 5ml/1 tsp ground cinnamon

- 1 egg yolk beaten
Method
- Sift together the flour, bicarbonate of soda, salt and spices. Rub the butter into the flour in a large bowl until the mixture resembles fine breadcrumbs.

- Roll and cut out shapes.
- Bake at 180C/350f/Gas 4 for approx 10 minutes, or until golden.
- Place on a cooling rack, or eat them while they’re still soft and warm!
