The Ultimate Golden Gingerbread

I would have called this The-Most-Unbelievably-Amazing-And-Easy-Gingerbread-You-Will-Ever-Taste-In-Your-Entire-Life Recipe, but it made the title a bit long. So I’ve put it here instead. It is, by the way. Trust me, it came from the wonderful Mrs Le-Brun, my second mother if ever I had one.

Ingredients

  • 175g/6oz plain flour
  • 1.5ml/ 1/4 tsp bicarbonate of soda
  • pinch of salt
  • 5ml/1 tsp ground cinnamon
  • 5ml/1 tsp mixed spice (optional)
  • 65g/2.5oz unsalted butter, cut in pieces
  • 75g/3oz caster sugar
  • 30ml/2tbsp maple or golden syrup
  • 1 egg yolk beaten

Method

  1. Sift together the flour, bicarbonate of soda, salt and spices. Rub the butter into the flour in a large bowl until the mixture resembles fine breadcrumbs.
  2. Add sugar, syrup and egg yolk and mix to a firm dough. Knead lightly. Wrap and chill for 30 minutes before shaping.
  3. Roll and cut out shapes.
  4. Bake at 180C/350f/Gas 4 for approx 10 minutes, or until golden.
  5. Place on a cooling rack, or eat them while they’re still soft and warm!

    This melts in my watering mouth. Yum. I so love gingerbread!
