Tropical Oatmeal Raisin Cookies

Try this low fat cookies that are hard to resist. They are so moist, fruity and chewy.

 

Ingredients:

1 and 1/4 cups all-purpose flour

1/2 teaspoon baking soda

nonstick cooking spray

1 and 1/2 cups-old fashioned rolled oats

1/4 teaspoon ground cinnamon

1/4 teaspoon salt

3/4 cup brown sugar

1/4 cup honey

2 egg whites

1 teaspoon vanilla extract

1/4 teaspoon coconut extract

1/2 cup dried fruit bits

1 tablespoon chopped crystallized ginger

2 tablespoons shredded coconut

Procedures:

1. Preheat oven to 350 degrees Fahrenheit. Spray 2 cookie sheets with the nonstick cooking spray and set them aside.

2. In a bowl, combine the oats, flour, cinnamon, baking soda, and salt, and set aside. In an electric mixer, beat the sugar, honey, egg whites, vanilla, and coconut extract until smooth. Add half of the oat mixture and mix again. Then add the remaining oat mixture, fruit bits, ginger, and shredded coconut until well combined.

3. Drop 1 heaping tablespoon of cookie dough 2 inches apart on the cookie sheets to form each cookie. Bake 10 to 12 minutes or until golden. Let cool for 5 minutes. Transfer cookies to a cooling rack, and cool completely.
