Vanilla Wafer Cookies

Budget friendly, scrumptious vanilla wafer cookies are an easy to make treat ideal for cookie jars and lunch boxes to have as accompaniment with beverages such as coffee, tea, milk, Milo, malted smoothies, hot chocolate, Mocha etc. or to serve with desert.

Vanilla Wafer Cookie Ingredients:
- 1 Cup (230g) of Caster Sugar
- 11/3 Cups (200g) of Sifted Plain Flour
- ½ Cup (125g) of Softened Butter
- 1 Egg
- 1 Tablespoon of Vanilla Extract
- ¾ Teaspoon of Baking Powder
- ¼ Teaspoon of Salt
Method:
- In a large mixing bowl cream together the softened butter and the caster sugar until light and fluffy
- Beat in the egg and the vanilla extract
- In another mixing bowl combine the flour, the baking powder and the salt
- Gradually add dry ingredients to the creamed mixture and mix well
- Preheat oven to 1800C
- Drop level teaspoons of vanilla wafer cookie dough about 5cm (2”) apart onto non-greased baking trays
- Transfer loaded baking trays to preheated oven and bake at 1800C for 12 – 15 minutes or until edges are golden brown
- Once cooked remove the vanilla wafer cookies from the oven and let stand on baking trays to cool for 1 minute before transferring to wire racks to cool completely
- When completely cooled transfer vanilla wafer cookies to an airtight container ready for consumption

Yield: These portions will yield around 3 dozen scrumptious vanilla wafer cookies

Serving: Vanilla wafer cookies are great when served alongside beverages such as coffee, tea, milkshakes, malted smoothies or a piping hot Mocha so they also make great additions to a mixed cookie jar/plate or as a lunch box treats. They are also at home when served atop whipped cream, ice cream or custard
